1.锅中烧热,倒入炒菜油,比平时炒菜用量多一些。热锅凉油下入花椒,麻椒,干辣椒煸炒,火不要太大,小火煸出香味
2.煸香后转中火放入郫县豆豉酱,我用的是带辣味的。煸出红油后,放入葱姜蒜爆香锅底
3.转大火,放入龙虾尾,大火翻炒,烹入点黄酒,翻炒后放入耗油,生抽,盐,糖爆炒2分钟左右
4.倒入啤酒,约龙虾尾一半的样子,转中小火盖上盖焖5分钟左右。掀开盖,此时如果汤多就转大火收汤即可
